Fish Just Landed - Davoer Sole, Mackerel & Haddock

The sun continues to shine, but with the spring tide it's been another quiet days fishing.

Willie is continuing to land mackerel in abundance and it is still as fresh and delicious as ever. If you are running our of ideas with what to do with it, there are some great suggestions on the channel 4 website.

Something new and interesting this week, we are offering tranches of Dover Sole (the fish equivalent to the t-bone steak). This piece also comes on the bone and is the perfect portion for 1. Bake it simply in the oven for best results.

We are very proud of our fish. Working with a small family run co-operative based on the South Cornish coast, our fish is caught using environmentally friendly static nets that don't disturb the sea bed.

It will be iced in boxes before being couriered over night to our depot - you really can't get fresher than that!

The hot, dry weather persists this week much to our delight. However, not everyone appreciates these prolonged heat waves. It doesn't take long without rain for the furrows to appear on our farmers brows. It is always shocking to learn how quickly things can change!

Rita informs us that Roy is threatening to perform his rain dance unless some of the wet stuff falls soon. High temperatures, combined with a persistent wind have conspired to suck the moisture out of the land, leaving thirsty crops like lettuces vulnerable. We also had some sad news from Andy who lost four of his lambs to the heat. It is by no means a desperate situation yet but it is interesting to understand how quickly conditions can change in the fields and just what a tough job farmers have dealing with the unpredictability of the British weather. It makes us appreciate their lovely produce even more.

Despite the water worries, the first of Roy and Rita's courgettes are now ready. Martin from Ripple Farm thinks the organic courgettes will be ready next week as they are 'growing like mad'. We also have organic basil - definitely a plant that benefits from the heat.

Matthew's loose carrots are ready to pick (we won't have lots available so be quick) - crunchy, sweet and earthy, they are a world away from the bland, carrot look-alikes found in the supermarket. His giant garlic is all set too. This year he's grown Iberian and Purple varieties that have great longevity and beautiful, fat bulbs.
Organic tenderstem broccoli arrives from Perry Court Farm this week. It's a hybrid of broccoli and chinese kale (or kai-lan) and has a flavour and texture closer to asparagus than calabrese broccoli. And salad bags return from Cultivate London after a gap due to irrigation problems.

As we enter a quieter period over the summer months we will only be offering Bocaddon Veal every fortnight. It will be available this weekend so stock up if you're a fan of their high welfare, rose veal.

We've always struggled to get our hands on fresh wild mushrooms so we are pleased to have come across a range of dried wild mushrooms to fill the gap. We've got chanterelle, shiitake, porcini & mixed mushrooms - all hand-picked.

From Matthew Kay of Manna Cakes in Hornsey, a new producer for us,  we have organic pickles, seville marmalade and a rich plum chutney. We'll also be trying one of their cakes in the depot on Saturday so come down and give it a sticky thumbs up or down. You'll be helping us keep our waistlines in check too.

Good news for small-scale fishermanThe High Court has ruled in favour of redistributing some fishing quotas from big producers to small-scale fisherman. The judge ruled that the sea and its fish cannot be considered private property and therefore the government has the authority to redistribute quotas. This is an important precedent that will certainly please our supplier Kernowsashimi. Currently, more than 90% of the fishing quotas allocated in England and Wales are controlled by members of the UK Association of Fish Producer Organisations which mainly consists of large-scale fisherman. Small-scale, in-shore fishing fleets - such as Kernowsashimi - that are far more sustainable in terms of their impact on fish
stocks, have suffered over the years as they have not been able to negotiate control of enough of the quota to remain viable. This ruling represents an important victory for our low-impact, sustainable fishermen. All in all, excellent news.
Super Grains
Introducing a new range of exciting grains (I never thought I'd say that) that are versatile, nutritious and delicious. We have greenwheat freekah, chia seeds, peal couscous and tricolore couscous. Each offers its own nutritional benefits and make great alternatives to staples like rice and pasta. Have a look at some of the recipes on their website for inspiration.
Joint a Chicken for your BarbecueWith barbecue season in full swing it's time to prove your carving skills. Buying a whole chicken and jointing it yourself works out being far better value than buying portions. It only takes a few minutes and there is a great deal of satisfaction to be had. With a sharp knife and a little help from Delia you'll be a pro in no time!

Blackberries, Courgette Flowers, Cooked Crabs & Lamb Burgers

Hello,

Farm Direct goes pretty this week with produce that is just as much about aesthetics as it as about flavour. And with the sun set to shine this weekend it's set to be a summery feast for the eyes and mouth. Rita's courgettes have started to flower (see more below) and we have plump blackberries from Tiptree.

As well as courgette flowers, Rita has been picking beautiful Cornflowers for us and we have them in purple now.

From Perry Court we have rather unique and beautiful mixed flower salad bags. They are a mix of mustard, rocket & radish flowers that will add the 'wow' factor to any salad. They've also been out picking Wild Bathua - considered a pesky weed by some farmers, it's good to see more unusual plants being made use of. It's very popular in Indian cooking and for good reason (see below).

Martin's organic new potatoes are now big enough for harvesting, completing our tater triumvirate: Jersey Royals, Roy's and Organic.

We have re-introduced our fruit & veg boxes now that the summer fruit is in full swing. Remember all our boxes offer a 10% saving compared to buying the items individually.

A quick note on our bunched carrots. We have heard that they go soft quite quickly and whilst they still taste great it can make peeling them a bit difficult. We have spoken to Matthew, our grower, and he will be removing the leaves from the bunches to prevent them sucking the moisture out. We're confident this will make a big difference but will be monitoring the situation closely.
Dylan has started steaming whole crabs for us. They represent excellent value at just £4.90, look fantastic, and will easily feed two. You'll definitely be the talk of the picnic if you turn up with one of these. The eating is good fun too! Just make sure you bring a nutcracker or hammer to get into them.

A far as summer salads go, my favourite has to be a tricolore. All you need is basil, tomatoes & mozzarella and a drizzle of good quality olive oil. I love the simplicity that lets the ingredients speak for themselves. This week our English Mozzarella is great value at only £2.49 and our beefsteak tomatoes are the perfect sweet and juicy partner.

Andy has made Lamb Burgers for us this week. Another addition to our lovely barbecue range.

Finally, we have two interesting new products from Woodlands Diary in Dorset. Natural Goat Milk and Organic Sheep Milk Yoghurts. Let us know what you think!

Lamb Breast: An unsung cut that deserves some attentionWe think it's time we showed this cut some love. It's fantastic value and extremely tasty (I'll admit to being a lamb breast newbie myself but can now vouch for this having had it for dinner last night). It's basically the lamb equivalent of pork belly - full of flavour with plenty of fat to crisp up in the oven, and wonderfully tender meat. It requires long, slow braising, roasting or stewing to tenderise. Don't put off by the fat. Just trim as much or little off as you like and much of it renders out during cooking. We have it boned-and-rolled and on-the-bone. Boned and rolled cuts are perfect for stuffing - I would recommend salsa verde for this. For a boned cut try following my method - simple but very effective.
Wild Bathua: For authentic Indian cooking
Bathua is well loved in Indian cooking but virtually unknown in Britain. Also known as Fat Hen, Lamb's-quarters and Pigweed, or Chenopodium album, if you want to show off your Latin. It's high in vitamin A, B - vitamins, vitamin C, calcium, potassium, iron and fiber. For authentic Indian cooking it can be mixed with chicken and meat to make a saag dish, with new potatoes it makes a lovely vegetable dish or with yogurt you can make a delicious raita. Check out our recipe for Bathua Parathas - they are a great accompaniment to a curry and quick and easy to make.
Courgette Flowers: A delicate summer treat
Something you never see in the supermarket - Courgette Flowers are a treat usually reserved for the budding gardener. Their leaves are delicate, sweet, with that slight earthiness of courgette. They can be stuffed, fried or even added to salads and soups. Traditionally, they are stuffed with ricotta and herbs, before being covered in tempura batter and deep fried
Our flowers are hand picked for us by Rita at Wild Fields, and we are even making an extra trip to ensure they are as fresh as possible. When you receive them put them in you fridge in a sealed bag to make sure they don't wilt and use the same day.

Veg Box Update - Fruit & Veg Boxes Return



With a great range of soft fruits now available (strawberries, raspberries, gooseberries and blackberries), our fruit and veg boxes return this week. All boxes contain a punnet of strawberries, while the large boxes also contain a punnet of gooseberries.
Veg wise, we have the first of the organic early potatoes in the boxes as well as baby green onions (which have come down in price). Enjoy.
